Eggless Cake
Ingredients:
- 1 Cup grated mixed fruits / 1 Cup mashed banana with little lime juice
- 1 Cup water
- 1 Cup sugar
- 2 Cups self-rising flour
- 1/4 Cup milk
- 125 gms Butter
- 1 tsp Soda bicarbonate
- Vanilla essence
How to prepare:
- 1 Cup grated mixed fruits / 1 Cup mashed banana with little lime juice

How to prepare:
- Heat water, sugar and butter together till the butter melts.
- Let the above mixture cool completely.
- Add soda bicarbonate to mixture.
- Mix flour, fruit and milk in a bowl.
- Mix both the mixtures.
- Add Vanilla essence according to the amount of cake.
- Pour the whole batter into a greased pan.
- Bake it at 180 C for one hour.
- Eggless cake is ready
- Let the above mixture cool completely.
- Add soda bicarbonate to mixture.
- Mix flour, fruit and milk in a bowl.
- Mix both the mixtures.
- Add Vanilla essence according to the amount of cake.
- Pour the whole batter into a greased pan.
- Bake it at 180 C for one hour.

- 3 cups All-Purpose Flour
- 1 tbsp Baking Soda
- 2 tbsp Cinnamon
- 2 tbsp Cloves
- 2 tbsp Allspice
- 2 tbsp Nutmeg
- 4 Eggs
- 2 tbsp Lemon Zest
- 2 tbsp Vanilla Extract
- 1 1/2 cups Raisins
- 1 1/2 cups Chopped Nuts
- 1 1/2 cups Dried Mixed Fruit
- 1 1/2 cups Butter, melted

- 2 tsp cinnamon
- 1-1/2 cup flour
- 1-1/2 tsp Baking Soda
- 1 cup chopped walnuts
- 3 beaten eggs.
- 1/2 tsp salt
- 1 tsp nutmeg
- 1-1/2 cup sugar
- 1cup canola oil
How to prepare:
- 3 cups grated carrot
- 2 tsp cinnamon
- 1-1/2 cup flour
- 1-1/2 tsp Baking Soda
- 1 cup chopped walnuts
- 3 beaten eggs.
- 1/2 tsp salt
- 1 tsp nutmeg

- Sieve the flour and mix it with baking soda, nutmeg, cinnamon and salt together.
- Blend grated carrots, sugar, oil, some walnuts and eggs.
- Mix dry ingredients into the above mixture.

- Cook the mixture at 350 degree F for about 10 minutes.
- Add food color to the cake if needed.
- Garnish with remaining walnuts and serve.

Chocolate Cake
Ingredients:

2 eggs -
1/2 cup warm water -
1 1/2 cups sugar -
2 cups sifted cake flour -
2/3 cup unsweetened cocoa -
1/2 teaspoon baking soda -
2 teaspoons baking powder -
2/3 cup shortening -
1 teaspoon vanilla -
2/3 cup milk -
1/4 teaspoon salt
Directions:

Grease and flour two medium layer baking pans. -
Mix flour, cocoa, sugar, baking powder, salt and soda . Add eggs, shortening, vanilla, water and milk; beat on low speed for 3 minutes. -
Pour batter into pans. Bake in preheated 350° oven for 30 to 35 minutes. -
Let cool in pans on a rack for 15 minutes; remove and place layers directly on racks. Cool completely.
Coconut Cake
Ingredients:

1-1/2 cups Unsweetened Desiccated Coconut -
1 cup Unsalted Butter, softened -
2 cups -All-Purpose Flour -
1 tsp Baking Powder -
1 tsp Vanilla Essence -
1-1/3 cups Sugar -
1 cup Whole Milk -
1/2 tsp Salt -
3 Eggs
How to make Coconut Cake:
-
Preheat the oven to 175 degrees C. -
Now grease a 10 by 2 inch round cake pan and line bottom with a round of wax paper or parchment. -
Grease paper and dust pan with flour. -
Combine flour, baking powder and salt, mix well. -
Beat butter with mixer till creamy. -
Gradually beat in sugar on medium speed till pale and smooth. -
Add vanilla essence to it, keep stirring. -
Beat in eggs, 1 at a time, mixture may look curdled at this time. -
Alternately beat in flour mixture and milk in 3 batches over low speed. -
Raise the speed to medium and beat batter 1-1/2 minutes till soft, now fold in coconut.
Spoon batter into the cake pan and spread uniformly. -
Bake cake in the middle of the oven till golden brown for about 45 to 50 minutes at the temp of 175 C. -
Cool cake in the pan on a rack for about 1 hour, then invert onto the rack. -
Remove paper and invert again onto another rack to cool completely. -
Coconut Cake is ready to serve.
